Traditional Swedish Christmas ham slow-roasted in the oven and finished with a mustard and breadcrumb glaze. Juicy meat with a crisp topping.

Ingredients

  • 3 kg cured gammon joint
  • 2 tbsp Swedish mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp breadcrumbs
  • 1 egg
  • 1 tbsp honey
  • 1 sprig rosemary
  • 5 allspice berries

Method

    Preheat the oven to 125 °C. Place the ham rind-side down in a roasting tin. Insert a meat thermometer into the thickest part.

    Roast until the internal temperature reaches 65 °C, about 4–5 hours. Remove and leave to cool slightly.

    Peel off the rind, leaving a thin layer of fat. Mix both mustards, honey and egg. Spread the glaze evenly over the fat layer.

    Sprinkle breadcrumbs over the glaze. Raise the oven temperature to 250 °C or switch to the grill function.

    Gratinate for 5–10 minutes until the surface is golden and crisp. Watch carefully so it doesn't burn. Carve into thin slices to serve.
