Trendy corn ribs cut lengthways and roasted with butter, garlic and spices. A great side or snack — can be made in the oven or an air fryer.

Ingredients

  • 2 corn cobs
  • 2 tbsp butter, melted
  • 1 garlic clove, pressed
  • 1 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp chilli powder
  • Salt and black pepper
  • Fresh coriander and lime to serve

Method

    Preheat the oven to 220 °C (or an air fryer to 200 °C).

    Halve the corn cobs, then cut each half lengthways into four ribs. Use a sharp knife and press firmly.

    Mix melted butter with garlic, paprika, cumin, chilli, salt and pepper. Brush generously over the corn ribs.

    Roast in the oven for 20–25 minutes (or air fryer for 12–15 minutes) until nicely coloured and the edges are slightly crisp.

    Serve immediately with fresh coriander and lime wedges.
